One of my favorite dishes to eat when I was a kid was my Mom’s chicken enchiladas. Whenever we got to request something for dinner, I was always asking for this dish. Flour tortillas stuffed with a creamy chicken and olive filling, then smothered with a spicy tomato sauce and baked until gooey and cheesy. more »
Cheese. It’s rich, creamy, decadent, and comforting… but it can also have a place in a healthy diet. Some (feta, chevre, Parmesan, etc.) are naturally lower in calories and fat whereas others (cheddar, monterey jack, mozzarella etc.) can be made with part-skim or reduced fat milk to lower their calorie and fat content.
