Coconut Carrot Cake

I’m not sure how carrot cake came to be associated with Easter, but in my house, it’s a must. I guess it has something to do with the fact that the mascot for Easter is a rabbit, and rabbits eat carrots. Whatever the origin, it’s a tradition I support.
