Tamales for Dinner

I have always loved the idea of remaking decadent recipes into something I could enjoy everyday without the guilt. So far this month I have been adding veggies to every meal and following a healthy diet regime, but lately I’ve been craving some hearty (I know it’s only the 10th but I can’thelp it). Obviously I wanted to keep the flavor, which I have found many recipes did not aka gluten-free pizza crust.

After scouring keyingredient.com, I found a sensational Healthy Chicken Tamales Pie recipe. To be honest, I have always loved tamales, but have never had the patience or the skills to try and make them from scratch. This recipe tastes just like tamales without the extra work or calories so what more could you ask for.

I already had most of the ingredients to start with, which is helpful when it comes to mid-week recipes. Thankfully, all the other components are pretty easy to find in your grocer as long as you’re okay with chatting up the sales clerks.

Another plus is that as I started making this delicious recipe I realized that each component could actually be used on its own. By adding the green chiles, taco- seasoning, and creamed corn to the corn muffin mixture it gives it a very unique flavor that would be a scrumptious addition to any meal. Also, the homemade taco-seasoning can be used on various meats give that Latin kick!

Overall, this recipe has definitely already become a staple in my house, and I know once you see your family’s reaction it will be for you too.

    Wow! This recipe looks delicious! I have always loved tamales but I’ve never considered making a casserole using the ingredients! What a great way to spice up a traditional recipe & add some variety to my family’s diet!
