10 Minute Nutmeg Gingerbread Parfaits

These dairy-free parfaits are the perfect small bite for your New Year’s Eve party. They taste a bit like cheesecake with a hint of nutmeg and spiced rum. Plus it only takes minutes to make.
When I have a cocktail party I always have a mini dessert along with the traditional savory nibbles. Sometimes the unexpected is just what you need to liven up your party.
If you have a few gingerbread cookies leftover from Christmas this is a great way to use them up and they won’t all end up in your tummy. Use any cookies you have around in place and make it even more dramatic by making multiple layers of cookie crumbs between creamy layers of filling. You could even do a different cookie crumb for each layer.
I use a combination of vegan cream cheese and silken tofu to make the base of the pudding. The So Delicious Coconut Nog and nutmeg are the main flavors of this delicate dessert with just a hint of spiced rum.
