Healthy Pastas for the Holidays


It can be hard to eat well during this time of the year.  These pastas are delicious, easy to make and good for you too!

The Lentil Quinoa Bolognese Sauce is from my new book, The Great Vegan Bean Book. This beany pasta sauce is perfect for a holiday gathering. It is vegan, but familiar enough that no one will bat an eye. The lentils and quinoa give it a hearty (almost meaty) texture but is made solely of whole foods.

In addition to that recipe I’m giving you a slow cooker pasta sauce that’s more hands off if you find yourself not wanting to be tied to the stove. The Vegan Sausage and Mushroom Ragu is just as hearty but will serve up to 12 people.

Plus it can keep warm in the slow cooker if dinner isn’t right on time or your guests won’t be arriving at the same time. It does use a vegan sausage substitute, but you can leave it out if you have guests that are soy or gluten-free.
