White Chocolate Cranberry Pistachio Cookies

These little cake-like cookies are full of spice, pistachios, cranberries and vegan white chocolate chips. Perfect for the holidays!

The white chocolate chips make these cookies rich and not-so fat-free. But they are still much lower in fat than most holiday treats. That makes them a perfect dessert after a big holiday meal.

The cardamom, nutmeg and allspice make these a more of a special treat. The kind that can make a bad day better after a hard day at work or school.

I really love the combination of flavors and think your holiday guests will too!

    The banana must make these cookies so moist – great flavor combination! Big fan of cranberries and chocolate!

    These cookies were not good at all. Not even really edible. We made them exactly as directed, only substituting semi-sweet chocolate for white and using 1/2 wheat flour and 1/2 cake flour as a substitute for the whole wheat pastry flour (as I read that combining the two is a good substitute). Well the texture was WAY off, soft and spongy instead of either soft and gooey or crunchy–which ok, maybe had to do with our substitution, but that does not account for the lack of delectable-ness. The flavors were just not there. Banana ended up being a predominant flavor, and banana, pistachio, cranberry, spice, chocolate cookies is a bit much, plus I couldn’t even really taste the pistachios, because the other flavors were so overwhelming. Will not make again. Also, I think leaving out any fat from the recipe did not help. If you’re vegan and don’t eat butter, I think some oil is necessary.

    Sorry that they didn’t work out for you. They are meant to be cake-like and not crunchy or gooey, I tried to put that in the description and post text but maybe I didn’t emphasize that enough. I can see how it would be disappointing if you were expecting something else.
