Flourless Chocolate Cake

This week is all about dessert at the Back Burner.  I know, you are probably expecting “mincemeat” pie.  Sorry to disappoint.  I certainly do not want to serve you something I wouldn’t eat, and that is one dessert I am not fond of.  Then I searched around for a “meat” inspired desserts.  There were not really any, and if there are, we both do not want to eat them.

Instead, I am going to share with you one of my favorite down and dirty desserts.  I tend to make this flour-less chocolate cake often during the holidays and for many reasons.  One of them being, you have dessert covered for your gluten-free friends, and those that eat everything just love eating a “candy bar” cake.  It is easy to make.  You probably have all of the ingredients on hand already.

For this post, I am going to give you the basic recipe, and from there you get to be as creative as you want.  It is lovely on its own and equally as delicious when you add warm spices such as cardamon, nutmeg or cinnamon.  Or spice things up with some chipotle.  A dash of orange bitters makes it zesty.  During the holidays, I like to dress the cake up with candied or sugared cranberries;  just make sit a little more festive.  Maybe sure a brown sugar creme fraiche next to it.  Or a substantial scoop of salted caramel ice cream.  Getting my drift?  I wanted you to have an enjoyable basic dessert that not will you use during the holidays, but also, time and time again.
