Farmhouse Cheddar and Irish Stout Fondue with New Potatoes

Fondue. It’s fun to say. It’s fun to eat. But is it fun to drink?

I don’t think so. You might pierce your cheek or burn your lips. So I just have to say, “sorry, no fondue for you, come back next week and order a double”. Because there’s just no way I can come up with a fondue cocktail. So instead I’m going to add the cocktail to the fondue.

Occasionally I do a post here that falls under the category Tidbits & Noshy Things– because everyone knows you can’t drink on an empty stomach. Besides sometimes happy hour is made way more cheerful with something savory to nibble on. Especially something as fun as fondue. Fondue with a kick in the arse!

You see, I’ve chosen to add stout to this fondue. Specifically Guinness. Because I like Guinness and it’s big enough to stand next to a Farmhouse Cheddar. It also gives a decidedly Irish take on the classic Swiss fondue. Which really shakes up expectations. I think the stout adds nice caramel and coffee notes which really accentuate the flavors in really good really sharp Cheddar cheese. I adapted this recipe from Bon Appetit. GREG
