Grilled Cheese Fondue
What’s better than a gooey grilled cheese sandwich for lunch? A grilled cheese sandwich dipped into more hot melted cheese!
Yep, this week we’re having fun with fondue, and I couldn’t help but make itty bitty bite-sized bacon grilled cheese sandwiches to serve alongside a big pot of liquid cheese.
Now traditional fondue has alcohol – typically wine – in it, but considering I’m eight months pregnant and we’re not actually cooking off the alcoholic content in the cheese “sauce”, I subbed in low-sodium chicken broth for this recipe. This substitution also makes the dish appropriate to feed to kids, so if you have children, this is the fondue recipe for you!
The type of cheese you use to make fondue will make all the difference in the final product. I used an equal ratio of gruyere to swiss, and the resulting sauce is silky, mild, and slightly nutty. In other words, the perfect canvas on which to paint any flavors you like!
This fondue would also be delicious served with lightly blanched veggies or tart apple slices; but these bacon grilled cheese sandwich bites were just about perfect
