Individual Sweet Potato Casseroles

How is it possible that Thanksgiving is already right around the corner?! By this point, you most likely have your menu set, but if you happen to be looking for a slightly unique side dish (without completely trumping tradition), give these individual sweet potato casseroles a try.

When I was a kid, my paternal grandmother was always in charge of making and bringing the sweet potatoes for our Thanksgiving table. With nary a marshmallow nor streusel topping in sight, I still loved her mashed sweet potatoes. Her secret? Adding a bit of orange juice to the potatoes.

I love the fresh brightness the orange juice lends to the sweet potatoes, so I borrowed her tip for this recipe.

I did stray from my grandma’s recipe when it comes to the topping, however. Whereas she left her sweet potatoes plain, I loaded mine up with a light streusel topping, which I think really makes this casserole something special.

This is a fun way to serve a classic holiday side dish, and the recipe is easy to adapt for a larger crowd. Your guests will love the way it tastes, and you’ll love how healthy it is!

    Adorable Lauren! I am such a sweet potato fan … love them all ways except with marshmallows. I have seen a few recipes using orange juice; I am intrigued. What I love about your recipe is the addition of maple syrup. Wonderfully warm combination of flavors. Happy Thanksgiving!

    put some pineapple in the filling and coconut in the topping, and this is precisely what my family eats on thanksgiving (and many other days in the fall and winter). love the personalized portions!
