Crab Stuffed Avocado

After a weekend of over indulging, we are on the path of eating a little healthier this week.  Not sure about you, but I know we over did it with regards to food this past weekend.  As you may have noticed yesterday, we are talking about all things avocado. I am really looking forward to seeing all the new to me avocado recipes as it is often the overlooked fruit, besides being tossed into a bowl of guacamole.

I love avocados, not only because they are wonderfully delicious, but they have amazing health benefits as well.  Did you know that this creamy green fruit is a great source of fiber, potassium and vitamins C, K, and B6?  One avocado has 320 calories and 30 grams of heart healthy unsaturated fat.  Not only is the avocado loaded with goodness that we all can use in our diets, but, it also helps prevent heart and eye disease.  It is a great addition to your diet to help lower your cholesterol, to control blood sugar levels and your blood pressure.  Pretty amazing, isn’t it?

Lenny has been watching his cholesterol since getting a very high diagnosis, a few months ago.  I have been using avocado more often, because of the health benefits.  It is a great substitute for creamy based dressings.  As well it is really good simply chopped up and served over lean grilled meat.  One of our favorite ways to enjoy avocado is during lunch in the form of a salad.

Crab is also an amazing seafood, not only in flavor but health benefits.  Seafood is rich in heart healthy omega 3 fatty acids;  you should be adding it to your diet at least twice a week, to help lower heart disease.  Crabs are very low in fat while still being a good source of omega 3 fatty acids.  In addition they have a healthy level of protein and are rich in vitamin B12, niacin, copper, selenium and zinc.

While it is not quite crab season around here, there has still been some amazing Alaska crab available at the market, and it is definitely worth a splurge.  Now that we are having lunch at home every day, I am always on the look out for light meals that won’t have us napping by 2:00 pm.  This light crab salad stuffed into an avocado is perfect.  The creamiest of the avocado really compliments the lightly spicy crab salad.  It is really a fun way to make lunch special or the beginning of a dinner at home a little more romantic.
