Grilled Sausage with Onions and Italian Sweet Peppers

Labor Day;  wow, I cannot believe it is that time of the year already.  Kids are going back to school and most of the US is preparing for some major cookouts this coming weekend.  We are not sure what is going on yet, as we may have to work.

If we happen to stumble upon some free time over the long weekend we definitely will be firing up the grill.  I am thinking easy this year.  Simple grilled meats with condiments and lots of end-of-summer salads.

One of our favorite go-to grilled dishes is sausages.  Not only are grilled sausages perfect for a long weekend cook-out;  but, they are great for quick week-night meals.  When we have a crowd coming over I like to pick up an assortment of pork, chicken and lamb sausages.  We are lucky to have a market that makes them in-house using premium meats and crazy flavorings, like garlic and cilantro or merguez lamb.  When buying non-traditional sausages the toppings can be simple but flavorful.

A favorite grilled sausage topping is this slow cooked onion and Italian Sweet Peppers.  I usually use red and orange bell peppers; but, I found these really delicious sweet Italian peppers so I used them last weekend when we grilled out.  I slowly cook thinly sliced yellow onions, then I add the peppers and a small amount of garlic, during the last few minutes of cooking.  The slightly caramelized onions go really well with any sort of sausage and the sweet Italian peppers added the sweetness that was needed.  When I want a little extra spice I add some jalapeños to the mix.

I, also, make a onion, pepper and fennel pollen topping that goes really well with spicy Italian Sausage, if you prefer a more traditional sausage cookout!

    Grilled onions and peppers don’t even need a sausage. Though I certainly prefer to have the sausage. GREG

    I would win some major points with my husband if I made these! Grilled sausages are one of his favorite baseball-watching foods, but I never make them at home.

    yum. my hot dog cookies are good, but nothing can replace real sausage, onions, and peppers. :)
