Chicken Salad Sandwich
We love roasted chicken. It is the first thing we want to enjoy, after coming home from a long trip. Nothing like the aroma of a slow roasted chicken stuffed with fresh herbs to warm the house and your soul. I love picking at the chicken when it comes out of the oven, the skin is crispy, juices are filling the roasting pan and the meat is buttery moist. Yum!
Whenever there is a roasted chicken in our house, I always make sure to save some of the meat to make a chicken salad to enjoy for lunch or as a light dinner. I have a few versions that I love to make. An Asian inspired that is slightly sweet and spicy. Or another one that is simply tossed with baby greens, fresh summer tomatoes, blue cheese and a creamy balsamic vinaigrette. One that I never tire of is a traditional creamy chicken salad.
When I decide to go traditional, I keep the ingredients simple, celery, red onion, creamy mayo and some tarragon. While this recipe may seem very simple to you, it is delicious. Not overly heavy with mayo, just moist enough to get your taste-buds going. The tarragon adds a summery freshness; but, feel free to use your favorite fresh herb, if you don’t care for tarragon. Spicy chili peppers are also great mixed in. I love this salad stuffed in a fresh tomato or avocado. Or as we really enjoy it, simply spread onto a freshly baked baguette. Fancy is nice; but, sometimes traditional and simple is comforting.
Next time you have a roasted chicken around the house, be sure to save a little of the moist chicken meat and make yourself a comforting chicken salad. It will take you back to a delicious place.
