Chilled Avocado Soup

When you think of meals to cool you off on a hot summer day, soup is most likely one of the absolute last items to come to mind. Yet the quintessential cold-weather staple doesn’t always have to be served piping hot.

Case in point: gazpacho, vichyssoise, and this chilled avocado soup.

Avocados + buttermilk combine to make a thick & creamy base, to which Mexican flavor enhancements are added. I topped the soup with corn kernels, sliced green onions, cilantro, and hot sauce, but you can top yours with whatever you like.

Simple & healthy ingredients, no cooking required, and bold flavors make this cold soup a perfect summertime lunch. All you need are a few simple ingredients and a blender… and you’ve got yourself an easy meal to combat the heat.

    this is outstanding, lauren–i’d love it. the corn on top is the perfect garnish. packaged frozen roasted corn? man, i’m missing out not having trader joe’s near me. :)
