Salmon with carrot pancake, salad and strawberry butter

I’ve started this recipe with the carrot pancake. I love the idea of ​​eating a pancake for dinner, not for breakfast. Also, in Quebec it’s strawberry season, so I thought a beurre blanc made ​​with strawberry syrup would be nice.

On the picture you can see bagel chips, but I decided not to include it in the recipe because ultimately I thought it brought nothing more to the dish.

The pancake is the tricky part of the recipe. Before frying it in the pan, be sure that it will hold enough. Add a little bit more flour if the mix seem too soft.
