Piña Colada Cake
I like girly drinks (I hope Greg doesn’t think less of me for that…), and high on my list of favorites is the piña colada. Not only is it delicious and refreshing, but it almost makes me feel like I’m wearing a lei on an island in the sun for a hot minute.
This invigorating dessert is perfect for anyone who, like me, wishes they could take a little trip to the tropics. What we have is a light and fluffy coconut cake that’s been torted (each layer cut in half horizontally), and between the moist, rum-soaked layers lies an extremely flavorful pineapple curd. Go ahead and say it: Ooh-la-la!
The frosting marks my first experience with Swiss meringue buttercream, and I can state with certainty that it won’t be my last–that’s some incredible stuff! It’s slick and creamy like a velvet suit and its perfect degree of sweetness is nicely off-set by the crunchy toasted coconut coating it.
It must be said that if you like piña coladas (and getting caught in the rain), you’ll love this cake.
