Mango, Avocado, & Toasted Coconut Salad with Lime Vinaigrette

Fruit makes up a large part of my diet during the warmer months, as I’m drawn to lighter fare that simultaneously quenches my thirst and satiates my appetite.

Tropical fruits are especially welcome when the temperature outside soars, rendering this flavorful salad ideal for hot summer days.

Reminiscent of my Massaged Kale Salad, this green salad also brings together the delicious trio of mango, avocado, and toasted coconut. I just can’t seem to get enough of the juicy, creamy, and crunchy combination. A sweet-tart lime vinaigrette ties all the flavors together to create this tropical side or main dish salad.

If you can’t slip away from work for a vacation in the Caribbean, at least you can bring the tropical flavors to your table!
