Independence Day Mints

Alternate title: Happy Mint-dependence Day!

If the standard red, white, and blue cupcakes or strawberry and blueberry pie are not what you want to make to celebrate the 4th of July this year, here’s a different idea: colored cream cheese mints. After all, nothing fights back against raw onion breath from copious hot dogs and hamburgers like soft, peppermint-flavored candy!

These are such versatile little treats. They’ll easily take any color, and if you happen to have candy molds, you can press the dough into them for an extra-special creation. If not, little discs or balls of sugary sweetness are just as good.

This is a terrific option if a) you’re swamped with other preparation, whether it be potato salad, fried chicken, or tapioca pudding, or b) you’ve just had one too many cocktails.
