Red Berry Salad with Granola-Crusted Goat Cheese
The summer solstice is this week, and though I’ve been eating summery dishes for weeks now, there’s something about the official start to the season that intensifies my cravings for light & refreshing meals.
Such as this salad adorned with ripe raspberries and strawberries, tangy goat cheese encrusted with crispy granola, and a silky double berry vinaigrette.
I can’t seem to eat enough organic berries in the summer. Sure, they’re available year-round in large grocery stores, but they taste infinitely better during the warm months, when grown locally (or at least not shipped from thousands of miles away).
The luscious berries are inarguably delicious, but the stand-out addition to this salad is definitely the granola-crusted goat cheese. The spheres of creamy goat cheese encased in sweet & crunchy granola not only taste great, but they also make for a gorgeous presentation.
There’s enough body and texture to this salad to stand up as a light summer entree, so if it’s already too hot where you live to turn on the oven or stove, this is a great option for lunch today!
