Crispy Baked Chicken Tenders

My husband and I do not yet have any kids, but my hope is that once we do, they will love healthy food as much as I do! I plan to involve our future children in cooking as early as possible, in an effort to encourage an appreciation of homemade food.

Here’s a healthier version of a kid favorite: chicken tenders.

Typically heavily breaded and deep-fried, commercially and restaurant-prepared chicken tenders aren’t the kind of fare I foresee feeding my kids. Especially not when it’s super easy to make a lighter – but just as delicious! – version at home.

A long soak in low fat buttermilk ensures that the chicken remains juicy and tender , and I used homemade whole wheat breadcrumbs + whole wheat flaked cereal for the coating, which crisps up beautifully in the oven.

Served with barbeque sauce, ketchup, or homemade honey-mustard dipping sauce, these chicken tenders are perfect for a kid’s birthday party (increase ingredient amounts accordingly). Soak the tenders & prepare the crispy coating the night before to speed up the process the day of the party.

I promise the kiddos will gobble ‘em up!

And for the adults: Layer a couple of chicken tenders into whole wheat rolls slathered with condiments of your choice, romaine lettuce leaves, and juicy tomato slices.

    Lauren, I agree about involving the little ones in the kitchen. Makes it so much more fun for them when they get to eat what they made. I have a similar chick nugget recipe – love it even for us big kids!
