Baked Lemon Donuts with (Vegan) Cream Cheese Frosting

Mother’s Day starts me thinking of breakfast or brunch. I always imagine a fancy outdoor set up with fresh, white irises that match the intricate lace tablecloths under someone’s great Grandmother’s china. I have no idea where that comes from since I’ve never experienced a Mother’s Day like that. Maybe I read too many women’s magazines growing up.  However, I do have an easy and healthy recipe for you to make and it’s great no matter where you eat it!

When I was little, I loved getting into the kitchen to try whatever new concoction popped up in my head. Some of my spice blends were pretty tasty and went into the cooking rotation, but others were murky and not quite fit for human consumption.

If your kids have those same tendencies, or are just too young to let loose on the kitchen yet, help them out by baking a batch of these easy donuts. Sure in a way, you’re making your own breakfast. But they can make the frosting or at least decorate. You can even bring out the sprinkles if you’re in the mood.

Decorating may not seem like much, but trust me you’ll see just how much work went into it once you walk into your kitchen after. Just take a deep breath, remember it’s your special day, and sit down outside far away from your now messy kitchen. You’ll find the donuts easier to enjoy away from the dubious cleaning going on anyhow. If you’re really lucky the little elves will have everything back into tip top shape by the time you’re done!
