Mahi Mahi Tacos

Cinco de Mayo falls on a Saturday this year, but instead of going out for a weekend Mexican meal, why not  make a healthy and delicious celebratory dinner at home?

Mexican food (well, at least Americanized Mexican food) is notoriously laden with loads of cheeses, with many deep-fried offerings. These tacos are proof that you can certainly enjoy Mexican flavors without resorting to highly fattening entrées. Fresh, light, and tasty, fish tacos are a healthy option.

Recipes for fish tacos vary by region and taste preference, but my favorite version includes lightly seasoned grilled mahi mahi, crunchy cabbage, soft flour tortillas, rich guacamole, and a creamy sauce to top it all off.

The mild-flavored mahi mahi develops a crisp crust on the exterior while maintaing a juicy interior, and the crisp purple cabbage adds a nice textural contrast to the creamy guacamole. I used Trader Joe’s habanero-lime tortillas for these tacos, as I love the pop of bright orange color, but any tortillas would work.

I know how I’ll be celebrating Cinco de Mayo this year!

    It is a chipotle-lime crema made with Greek yogurt and buttermilk!
