Caramelized Banana Sandwich
I recall with great clarity the unbelievably delicious Grilled Banana Sandwich I treated myself to from Mike & Patty’s a few years ago.
A tiny restaurant tucked into a corner of Boston’s South End, Mike & Patty’s could easily be overlooked by passerby… but one of my friends absolutely raved about the food in general – and the Grilled Banana Sandwich specifically – so my husband and I wasted no time seeking it out for ourselves.
The banana sandwich really was amazing. Deeply golden brown and perfectly crispy on the outside with soft & pillowy caramelized bananas stuffed into the center, that sandwich clearly left quite an impression on me.
So when we were asked to recreate a recipe from either a restaurant or family/friends for The Back Burner, I knew exactly what I was going to make!
My version is undeniably healthier than the original, but it is certainly not lacking any of the flavor.
I cooked banana slices with a touch of brown sugar until soft and caramelized, tucked them in between two slices of hearty whole wheat bread spread with homemade cinnamon honey butter, and “grilled” the sandwich in a skillet until crisp and golden.
I think I need to recreate restaurant favorites more often
