1. Describe your cooking style.
Healthy, low-fat cooking without disturbing the good taste of “comfort food”.
2. Who do you love to cook for?
My husband, grown son, and neighbors!
3. Where do you get your inspiration?
I love reading cookbooks of any kind along with magazines for inspiration and of course my mother, who is a very good cook and encouraged the love of cooking and baking in me.
4. What’s your favorite recipe that you’ve shared with us?
Chicken Enchiladas with white sauce. This is one of my husband’s favorite recipes and one I make quite often. It has been revised to be as healthy as possible using low-fat sour cream and low-fat cream of mushroom soup.
5. What’s the best part about sharing recipes?
I love having others critique a recipe so I can constantly gather new ideas. I have made many new friends through sharing recipes alone – sometimes it can be the best ice breaker.
6. Name one key ingredient you always have on hand.
Beans – any kind – great northern, kidney, pinto, cannellini. Beans can be added to so many different recipes for just an added bit of protein without compromising flavor. I even have recipes for brownies that include beans!
