Perfectly Grilled Steaks

Summer is lurking around the corner, with a twinkle in its eye.  Time to dust off those BBQ grills and get ready for some fun.  I don’t think there is anything that screams summer, more than to light up the grill and toss some steaks onto it.

Drunken Halibut

This week is all about foods or recipes that make us happy.  There are many meaty dishes that make me smile from ear to ear.  Rich, slow-roasted stews.  Hearty soups filled with chunks of roasted chicken or tiny, savory meatballs.  Simply grilled steaks.  Sticky ribs that are slowly smoked over an open fire.  One dish that always puts a smile on my face is a piece of snowy white halibut that has been poached in oil olive, or oven roasted with a drizzle of white wine, or marinaded and grilled.

Moroccan Chicken Couscous

The writers for the Back Burner are celebrating all that is “mom” this week.  I tossed around different approaches of how to honor my mother in a meaty sort of way.  I won’t lie it was a bit challenging.  There is not a meaty recipe in my collection that makes me think of mom, so I took another approach.
