Raspberry Grilled Cheese
The end of berry season is upon us, and though I’ll miss the plethora of summer produce I’m actually quite looking forward to sinking my teeth into crisp local apples. That being said, I’ve been taking full advantage of the last few weeks of sweet fresh berries with simple recipes such as this grilled cheese sandwich.
I used both brie and goat cheese, as I think these cheeses go particularly well with raspberries. Luckily I had no problem finding pasteurized versions of both, which is important for a pregnant woman.
You might be tempted – as I was – to be overly generous with the brie and goat cheese for the sandwich, but these cheeses both have bold flavors and we don’t want to overpower the delicate flavor of the raspberries!
A light drizzle of honey completes the filling for the sandwich…
… and a quick pan-fry in a bit of butter yields a crisp golden-brown exterior with a warm and melty interior.
Just what you want in a grilled cheese!
The flavors in this sandwich go exceptionally well together. The tangy goat cheese, rich buttery brie, juicy raspberries, and touch of sweet honey play off of and complement each other beautifully.
If you need a reason for one more go-around with the last of summer’s berries, this is the lunch for you!
